Today Friday bake is carrot cake, I used the recipe from this book, I do have a recipe for carrot cake that I have made for years, it uses three different sugars and oil as the fat, this one is basically a sponge mix with carrot and mixed peel added. I think I prefer the original recipe.
I have a good recipe taken from the BBC good food website. Easy to make and very tasty.
